  • 4 boneless, skinless chicken breasts
  • 1 cup of finely chopped mushrooms
  • 2 cloves of minced garlic
  • 1 small onion, finely chopped
  • 1 cup of fresh spinach leaves
  • 4 ounces of cream cheese, softened
  • 1/4 cup of grated Parmesan cheese
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of dried thyme or rosemary
  • Toothpicks

Instructions

  1. Prepare the chicken breasts by making a pocket in each and seasoning with salt and pepper.
  2. Heat olive oil in a skillet, sauté onions and garlic until translucent, then add mushrooms and cook until golden brown.
  3. Stir in spinach until wilted, then remove from heat and mix in cream cheese and Parmesan cheese.
  4. Spoon the mushroom mixture into the chicken pockets and secure with toothpicks.
  5. Preheat oven to 375°F (190°C), sear chicken in a skillet until golden brown, then bake for 20-25 minutes until cooked through.
  6. Remove toothpicks and let the chicken rest before serving.
