Ingredients

  • Chicken Breasts: 4 boneless, skinless
  • Olive Oil: 2 tablespoons
  • Salt and Pepper: to taste
  • Garlic: 2 cloves, minced
  • Onion: 1 small, finely chopped
  • Spinach: 2 cups fresh leaves
  • Cream Cheese: 4 ounces
  • Parmesan Cheese: 1/4 cup grated
  • Bread Crumbs: 1/4 cup
  • Herbs: 1 teaspoon (thyme, basil, or parsley)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse and pat dry the chicken breasts. Slice horizontally to create a pocket.
  3. Heat olive oil in a skillet over medium heat. Sauté garlic and onion until soft.
  4. Add spinach to the skillet and cook until wilted. Remove from heat.
  5. In a bowl, mix the spinach mixture with cream cheese, Parmesan, and bread crumbs. Season with salt, pepper, and herbs.
  6. Stuff each chicken breast with the mixture. Secure with toothpicks if necessary.
  7. Drizzle olive oil over the chicken and season with salt, pepper, and additional herbs.
  8. Bake in the preheated oven for 30-35 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Let the chicken rest for a few minutes before serving.
